- A low fat cooking spray
- 3 cups of properly peeled and finely diced butternut squash
- 2 cups of finely chopped carrot
- 1 leek. Take the white and tender green parts only and then chop it finely.
- 2 ½ oz cans of chicken stock with low sodium
- ¼ teaspoon of freshly ground pepper
- ¼ teaspoon of nutmeg
- salt to taste
- ¼ cup of low calorie milk.
- Rosemary sprig for garnishing the soup.
To make the delicious zero fat soup, you just have to spray the low fat cooking spray on a saucepan and let it heat properly. Then add the carrots, leeks, and the butternut squash and let it cook for 7-8 minutes. Cook it uncovered and also stir the ingredients continuously.
Then add the chicken broth along with pepper, and nutmeg and leave it to boil. Cook it on lower flame and then let it cook in the covered pan for 30 minutes until the vegetables get tender. After this is done, place the soup in the mixture and blend it finely until it becomes very smooth. Then again bring it to boil in the pan and then add milk and salt according to your taste and then garnish it and serve.
